Today I wanted to introduce Korean Glass Noodles Recipe - Japchae. It's perfect for a potluck dinner party and it's easy to make. It's cooked in one pan and super easy Korean glass noodles stir fry dish that you can try. And I have yet seen a person who doesn't like Japchae as it's an easy introduction to a Korean meal.
I used to think that making Japchae is so cumbersome but I've learned to make it in 30 minutes!
Traditionally, you have to cook vegetables, noodle, and meat separately. But in this recipe, I've cooked them together and I also skipped cooking the noodles separately which really saves a lot of time.
The result was still a delicious Japchae so hope you enjoy this recipe and give it a try!

Ingredients:
- Onions (½)
- Shitake Mushrooms (4-5 mushrooms)
- Wood Ear Mushrooms (1 cup)
- Carrots (Half carrots, sliced)
- Minced Garlic (1TB)
- Spinach (4 oz)
- Meat (4 oz)
- Oil (2 TB)
- Glass Noodles (4 oz - two handfuls)
- Marinade for the meat
- Soy sauce 2T
- Sugar 1T
- Garlic 0.5 T
- Sesame Oil 0.5T
- Green Onions 1T
- Sauce
- Soy Sauce (4 TB)
- Sugar (2 TB)
- Sesame Oil (2 TB Sesame Seeds (1 TB)
- Pepper
Cooking Instructions:
- Soak glass noodles in water 40 minutes - 1 hour
- Marinate meat with the marinade sauce
- Blanch spinach and squeeze water out and set aside
- Add garlic in oil and cook until golden
- Add onions and cook until translucent*
- Add carrots
- Add shitake and wood ear mushrooms
- Add salt and pepper
- Set aside the cooked vegetables
- Cook meat until thoroughly cooked
- Add 2 cups of water with half of the sauce and cook the glass noodles
- Add all vegetables and meat into the noodles and add the remaining sauce and mix them together
*I've skipped adding onions since I ran out of onions that day! So the picture is missing the onions ><
For meat, I've used Beef Chuck Short Rib meat from Costco. Whenever I buy those, I either marinade it or grill it or use it for soup or dish like Jap Chae. I used one strip of the meat from the package below and sliced them thin.
The blanched spinach that I squeezed and set aside. Spinach was blanched just about 6 seconds and taken out of boiling water.
The vegetables were prepped
Vegetables were cooked first and set aside
Meat was cooked next and set aside
Then noodles were cooked and the remaining ingredients (vegetable and meat) were all mixed in with the remaining sauce
It was plated on a plate and was so delicious!
